Mango Guacamole

Mango Guacamole
1 ripe mango, peeled and cut into cubes
¼ cup of jicama, diced
¼ cup red onion, finely chopped
1 Tbsp Serrano pepper, seeded, deveined, finely chopped
¼ tsp minced garlic
2 Tbsp lime juice
½ tsp salt
¼ tsp freshly ground black pepper
2 ripe avocados
3 Tbsp chopped fresh cilantro
2 Tbsp pomegranate seeds (optional)

1. In a large bowl, combine mango, jicama, onion, Serrano pepper, garlic, lime juice, salt and pepper;
toss together and set aside.
2. Cut the avocados in half, remove the seeds, and with a spoon remove all the pulp, discarding seeds and skins.
3. With a fork, mash the pulp until slightly chunky and mix with the mango and remaining ingredients. Add the cilantro and toss together. Taste and adjust salt to taste.
4. Serve the guacamole in a nice bowl and garnish with pomegranate seeds if desired. Serve with corn tortilla chips on the side.

Yield: 6 servings
