Chickpea Hummus Burgers



Prep Time: 20 Minutes

Ingredients:

  • ¼ cup rolled oats

  • 1/8 cup pumpkin seeds

  • 1 can garbanzo beans (chickpeas), rinsed and drained

  • 1 medium carrot, grated

  • ½ cup flat-leaf parsley leaves

  • 1 tablespoon tahini

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • ½ teaspoon minced garlic

  • ½ teaspoon kosher salt

Directions:

  1. Add oats and pumpkin seeds to a food processor or blender and pulse until coarsely chopped.

  2. Grate a carrot and add to the food processor (or use bagged shredded carrots)

  3. Add the remaining ingredients

  4. Pulse until mixture is roughly chopped, pausing to stir with a spatula once or twice. Don’t over-process it or it will become too creamy.

  5. Once mixed, transfer the mixture to a bowl. Wet your hands with water and form the bean mixture into four tightly packed patties.

  6. Cook burgers over medium heat in a non-stick pan until browned on both sides.

  7. Serve on a bun or on top of a salad.
